No bake protein balls

Quick to make, these balls are very easy to enjoy! Add extra oats if you don’t have coconut on hand or try chocolate protein powder for a fun flavour change.

Ingredients

  • â…” cup (157.5 mL) quick one-minute oats
  • â…” cup (157.5 mL) unsweetened peanut butter
  • 3 tablespoons (44.4 mL) Splenda® Stevia Sweetener Jar
  • ¼ teaspoon (1.2 ml) kosher salt
  • ½ cup (118.3 mL) vanilla protein powder
  • ½ tablespoon (7.4 mL) chia seeds
  • 1 tablespoon (14.8 mL) ground flaxseed
  • 3 tablespoons (44.4 mL) unsweetened coconut flakes
  • 3 tablespoons (44.4 mL) stevia-sweetened dark chocolate chips

Instructions

  1. Spread oats out onto a small baking sheet and toast them at 350°F (177°C) for 10 minutes.
  2. In a microwave-safe bowl, add peanut butter and warm for 20 seconds.
  3. Stir in sweetener and salt. Add toasted oats, protein powder, chia seeds, flaxseed, and coconut flakes. Let mixture cool completely. Stir in chocolate chips. Refrigerate the mixture if needed before rolling into balls.
  4. Roll mixture into balls about 2 tablespoons (29.6 mL) in size.
  5. Place No-Bake Protein Balls in an air-tight container and store in the refrigerator. Enjoy within a week!

Notes

  • If coconut flakes are not available, use extra oats.
  • Chocolate protein powder may be used for a flavor change.
