Getting rid of those Thanksgiving leftovers but want to keep it light? This salad is just the thing! Packed with fresh, fibre-filled ingredients and protein, it’s sure to fill you up and keep you full longer.
Ingredients
- 1 tablespoon (15 mL) whole-grain mustard
- 1 tablespoon (15 mL) apple cider vinegar
- 1/4 cup (60 mL) extra-virgin olive oil
- ¼ tsp (1 mL) each salt and freshly ground black pepper
- 4 cups (1L) mixed greens
- 2 pears, thinly sliced (about 2 cups)
- 2 cups (500 mL) shredded or cubed roast turkey breast pieces
- ½ cup (125 mL) aged gouda cheese, diced or grated
- ¼ cup (60 mL) coarsely chopped walnuts
- ¼ cup (60 mL) dried cranberries
Instructions
- In a large bowl, whisk the mustard, vinegar, oil and seasoning until combined. Add the greens, pears, turkey, and gouda to the bowl and toss with the vinaigrette to lightly coat.
- Divide the salad among 4 plates, and top with the walnuts and dried cranberries
